“Our ice creams are unique and always have our own twist to it,” Mayra says. Their Fresas con Crema is made with a homemade cream that they make in-house. The Esquites corn salad is made fresh everyday. Their purées for their Raspados are made in-house as well.

Mexico was undergoing an industrial boom, and poor farmers from Michoacan were streaming to Mexico City in search of work. Some of the newcomers started peddling La Michoacana Popsicles. Others started their own stores. Michoacan migrants were soon known for ice cream.

“Mexican ice cream is closer to gelato, as it has less fat and air than American style,” Gerson says. Unlike the Ben & Jerry's we're used to, ice cream in Mexico also places more stress on the flavoring agents, like chocolate, cinnamon, and fruit, and less emphasis on mix-ins like candies and cookies.
